Pichot is a hybrid of peach and apricot. But they didn't become friends during the selection process, we simply aged this wild beer on local peaches (the same ones that were used in π4) and apricots. Subtle hints of ripe fruit skin, light tartness of the stone, a recognizable profile, and pleasant fresh sourness - your sparkling beer this summer.
